Data is becoming key in food production and is changing the role of mechanical and plant engineering companies. These developments will be visible at Anuga FoodTec.

Data-driven production is increasingly becoming a central element in the food industry. This development is not only changing production processes but also the role of machine and plant manufacturers, who are evolving from pure suppliers to strategic partners for production optimisation. They are key players in digital transformation today. This will also be a topic at Anuga FoodTec, which will take place in Cologne from 23 to 26 February 2027.

Food production is increasingly becoming a smart and digitally networked industry. Artificial intelligence and modern sensor technology make it possible to evaluate large amounts of data from networked plants and to control processes more precisely. These technologies are crucial for gaining an advantage in a competitive industry.

The international trade fair from 23 to 26 February 2027 in Cologne will demonstrate how these developments can be implemented in practice – from the use of modern sensor technology and automation, through MES and cloud applications, to AI-supported analysis and control systems.

The Transformation of Mechanical Engineers

With increasing digitalisation, the tasks of mechanical engineers are also changing. They are evolving into data partners who not only record machine data, but also intelligently link and use this data along the entire value chain. Carola K. Herbst from the DLG (German Agricultural Society) emphasises that the intelligent use of data is crucial for production optimisation. Companies such as GEA Group and Krones are presenting platform solutions at Anuga FoodTec that enable comprehensive analysis of process and operational data.

Support through artificial intelligence

Artificial intelligence plays a central role in supporting skilled workers in production. It helps to manage processes more stably and reduce quality fluctuations. The Anuga FoodTec framework programme addresses these topics under the motto „Navigate Complexity. Smart. Safe. Sustainable.“ and offers lectures and discussion rounds on key industry issues.

Practical examples and adaptive processes

Current developments in applied research show how data-based decisions are implemented in practice. For example, Fraunhofer IVV is driving forward adaptive cleaning. The aim is to replace traditional cleaning processes, which are designed for worst-case scenarios, with needs-based procedures. Optical sensors are used to record the soiling status of the system in real time: critical areas are cleaned more intensively, while less soiled zones are treated in a resource-saving manner.

The development shows: artificial intelligence has left the phase of pure pilot projects in food production and is finding its way into concrete applications. The Anuga FoodTec in Cologne demonstrates the potential and precautions that arise from this for efficiency, quality and process reliability – from data analysis to direct implementation in everyday production.
