Live demonstration of cooking food in the packaging

At Anuga FoodTec 2018, the Swedish food technology company Micvac is showcasing a gentle cooking method for ready meals directly in the packaging. The manufacturer from the town of Mölndal cites the advantages of its method as being that meals produced in this way can be kept for several weeks without any loss of quality. The vitamins, texture and colour of the ingredients also survive this period unaffected.

Special trays with a patented base construction literally form the basis of the Micvac process. The bowls are filled with the raw ingredients for the finished dish. Then the Tray sealed with a special film. The film contains a Valve embedded.

The now sealed bowl is placed in a container for cooking and pasteurising. Microwave tunnel is channelled. Vapour and oxygen escape through the valve. A natural vacuum is created inside the trays, which seals them hermetically. At the end of the Processing line the ready meal is cooled quickly and effectively.

Micvac offers its customers training courses at its company headquarters at a Test facility on. In addition, fully functional and transportable Micvac equipment is offered in mini format to test the process on site under real conditions.
